VEGAN/VEGETARIAN CHILI


VEGAN/VEGETARIAN CHILI

12g protein, 36g carbs, 2g fat per serving

* 1 can of red kidney beans

* 1 can of black kidney beans

* 1/2 cup of quinoa, uncooked

* 1 large can of fire roasted tomatoes

* 1 can corn

* 1/2 chopped, white onion

* Assorted chopped bell peppers

* 1 cup vegetable stock

* Seasonings (garlic powder, onion powder, chili powder, cumin, S&P)

« Cook onion in large pot with a little bit of olive oil until tender.

« Add in the rest of the ingredients. Mix well. Let simmer until quinoa is cooked!
