QUINOA BLACK BEAN SALAD


QUINOA SALAD

* Lime juice

* Ground cumin

* Sea salt

* Olive oil

* Can of black beans

* Red wine vinegar

* Ground pepper

* 1 cup of quinoa

* Orange, red, yellow bell pepper, diced

* Fresh cilantro, finely chopped

« Dressing: Combine a couple tbsps of lime juice with a dash of cumin and sea salt. Mix in another couple tbsps of olive oil.

« Combine beans, vinegar and ground pepper in a separate bowl. Mix well.

« Cook quinoa and let cool for about half an hour.

« Combine everything in a large bowl - quinoa, dressing, beans, bell peppers and cilantro. Toss gently to blend.
