POTATO & BLACK BEAN QUINOA BOWL

* Sweet potatoes

* Coconut oil

* Chili powder

* Romaine lettuce

* Quinoa

Dressing:

* Avocado

* 1/2 cup raw cashews

* 1/2 cup cilantro

* 2 tbsp lime juice

* 1/2-3/4 cup water

* dash of S&P

* Dice up a couple large sweet potatoes. Toss in melted coconut oil and chili powder. Bake in 425F oven until tender (25-35 min).

* Meanwhile cook about 1/2 cup of quinoa on stove top. And begin making your creamy dressing.

* For dressing: blend ingredients together. Start with a small amount of water adding more as needed to make the dressing suitable to drizzle.

* Open and drain a can of black beans. Add to the cooked quinoa.

* Once sweet potatoes are finished, let cool for about 5 minutes and then add them to the quinoa black bean mix as well. Toss this mix with about a tbsp of lime juice.

* Slice up some romaine lettuce and place on a plate. Layer sweet potato mix on top and then drizzle with your creamy dressing.
