CORIANDER PORK KABOBS WITH RED ONION SALSA

Kabobs

* 1lb pork tenderloin cut into 1" cubes

* 2 cloves garlic, minced

* 1 tbsp ground coriander

* 1 tbsp olive oil

* 1 tsp paprika

* 1/4 tsp cayenne

Red Onion Salsa

* 2 cups grape tomatoes, halved

* 1 cup thinly sliced red onion

* 1 1/2 tbsp red wine vinegar

* Pinch of salt and coconut palm sugar

* 2 tbsp fresh mint, chopped

« Toss ingredients for kabobs together and marinate for 10 minutes.

« In a separate bowl, mix together all salsa ingredients.

« Thread pork cubes onto skewers and BBQ until done (they don't take long).
