THAI QUINOA BROCCOLI AND CHICKEN

THAI QUINOA BROCCOLI AND CHICKEN
* 1/4 cup soy sauce
* 2 tbsp oyster sauce
* minced garlic and ginger
* chicken breasts
* broccoli
* onion
* 3 tbsp peanut butter
* 1 tsp honey
* quinoa
« Thinly slice chicken breasts and marinate in soy sauce, oyster sauce & minced garlic and ginger.
« Cook quinoa.
« In a large skillet, heat oil, cook broccoli and thinly sliced onion until tender.
« Remove broccoli and onion from skillet. Throw in chicken, reserving the marinade. Cook chicken till done.
« Add broccoli and onion back in. Pour in the reserved marinade.
« Mix together peanut butter and honey with 3/4 cup water. Pour PB mix into skillet and heat for a minute or two.
« Mix everything together well.
« Spoon quinoa onto plate. Top with chicken broccoli mixture, spooning sauce over top of it all. Garnish with chopped peanuts.
