LOADED BREAKFAST SALAD TO GO

* spinach

* bell peppers

* tomatoes

* green onion

* avocado

* two eggs

* shredded old cheddar cheese

* salsa

* cilantro - this makes is super fresh and light tasting first thing!

« Layer the bottom of a container or Mason jar with some salsa, then lay the tomatoes, peppers and onions on top of that. Next place your spinach, cheese and cilantro.

« Have hard boiled eggs cooked up and ready to take with you OR top the breakfast with 2 eggs cooked over easy

« If you want avocado with it, I would suggest bringing one to work with you to cut up when you need it (if possible) or cut some up the morning you need it and take it with you.
