BEEF & BROCCOLI WITH RED BELL PEPPER


BEEF AND BROCCOLI WITH RED BELL PEPPER

* 1/4 cup reduced sodium soy sauce

* 6 tbsp water, divided

* 2 tbsp cornstarch, divided

* 1 tbsp raw honey

* 1 lb raw top sirloin, sliced into 1/2" thick pieces

* 1 tsp coconut oil

* 4 cups broccoli

* 2 medium bell peppers, cut in chunks

* 2 cloves garlic, minced

* 1 thin slice fresh ginger, minced

« Combine soy sauce, 4 tbsp water, 1 tbsp cornstarch, and honey in a small ball. Mix well.

« Combine remaining cornstarch and water in a large bowl. Mix well. Toss in beef.

« Heat oil in large skillet over medium-high.

« Add beef, stirring frequently, cook for a couple minutes till just cooked through. Remove from skillet and keep warm.

« Add broccoli, bell pepper, garlic and ginger to skillet. Cook, stirring frequently for 3-5 minutes.

« Pour in soy sauce mix and heat, stirring constantly until thickened.

« Add beef back in. Mix everything together. Cook 1-2 minutes until everything is well mixed and heated through.
