Southwest Sweet Potato Pile
Didn't know what to make for supper, ended up throwing this together- I guess it's sweet potato covered in nacho like toppings... we devoured the entire thing. Quick, delicious, and healthy! Try it out!
Dice up sweet Potato, season as desired (used chipotle powder, garlic powder, chilli powder, and some olive oil). Cook in microwave.
Chop up cooked chicken breast (had some on hand already) a tomato, couple green onions. Drain and rinse half a can of black beans. Mix all together.
Dump sweet potato on a baking sheet, mound the chicken/veg mix on top. Top with a little bit of grated cheese.
Put the whole thing in the oven, warm for a few minutes (probably about 5-8 @ 400) then switch oven to broil until cheese is melted and bubbly.
Remove from oven. Top with diced avocado, chopped cilantro, and some Greek yogurt. Enjoy!
