Sweet Potato Slider Melts


Sweet Potato Sliders

1 Sweet potato, cut into slices

Spinach leaves

Tomato slices

Sliced, chicken breast

Red onion, sliced

Mozzarella, sliced

Cut sweet potato into slices (even thinner than mine in the picture, these ones were too thick and took a long time to cook). Layer spinach, tomato, chicken breast, onion, mozza, and BBQ sauce on top of one slice. Top it all off with another slice of sweet potato. Skewer slider to keep it together. Bake in oven at 375 for 35 minutes.

The original recipe uses deli turkey meat. I used frozen chicken breasts. I let them thaw enough that I could cut them in half length wise. Then cut them in half width wise and stacked 2-3 pieces on each slider.

You can also prebake the sweet potato slices for about 10 minutes in the oven before assembling your sliders to ensure they're cooked through.
