Breakfast Salad

Fresh spinach Red onion, finely diced Bell peppers, diced Avocado, diced

Bacon, cooked, chopped (optional)

Homemade hashbrowns, regular or sweet potato

An egg or two, cooked how you prefer - I recommend cooking them overeasy and letting the yolk run down on top of everything, YUM!

Cilantro, roughly chopped

Sprinkle of cheese (fresh grated parm is the way to go!)

Salsa or hot sauce (optional)

Place a layer of spinach on your plate. Sprinkle onion, peppers, avocado, hashbrowns, bacon, and cilantro over spinach. Layer your eggs overtop of all this. Sprinkle your cheese over the entire thing and then top with salsa.

Homemade hashbrowns: Finely dice up sweet potato or a regular potato. Season as desired (we like oregano, garlic powder, onion powder, chili powder). Spray frying pan with some oil, cook hashbrowns on medium heat until tender, stirring often.
